Great article Trin, lovely to see many of my favourites on your list!
I didn't know burdock was the same plant having the seed burrs, (my dog used to get covered in those) I'll be much more interested in the plant next time they stick to me!
I've always been told not to eat nettles when you can see the flowers (hanging down like short, thick threads) as the oxalic content of the leaves at that time can irritate the kidneys. However the plus side is that if you wait a bit longer and collect the seeds, they are incredibly balancing for the kidneys and can be eaten on salads and cereals or mixed into fine sea salt and used as a condiment. Just cut the mature nettles down and lay on paper somewhere warm until dry and then rub the seeds off the threads. Its a bit fiddly, but a nice job to do sitting down having a chat with a friend or family member. The seeds are especially good for anyone with exhaustion or adrenal fatigue.
